You could simulate a 10x10 chessboard by playing on the lines of 16 piecepack tile backs. I'd do a 4x4 board made up of 4 2x2 boards with a one inch gap between each of the 4 sub-boards that pieces need to "hop" over (i.e. you'd Xiangqi-style "rivers" both horizontal AND vertical).

Or make a 10x10 board by using all 24 piecepack tiles and fill in the missing "middle-tile" with two dominoes (null-5 and null-6?) or some dice or ??

Actually, I just ordered this Canadian Checkers set from Amazon. It's apparently pretty flimsy, and the squares are small, but it's the only 12x12 board you can buy on Amazon. It has a 10x10 board on the back, and 30 checkers/side, so it should work out well for a way to play Cannon portably.
I'm also in the process of buying a copy of Shuuro from a BoardGameGeek seller. That has a pretty heavy-duty 12x12 four-part foldable chessboard, with an 8x8 board on the back. I'm pretty sure I can get it into my kit once folded, but it may be too heavy to carry around on a regular basis.

Shuuro's chessboard can also be folded into a 6x6 configuration or, I have to assume, a 6x12 one, so I'm on the lookout for chess variants that use those sizes of board.
